Pan Seared Wahoo with Tomato Bruschetta

Recipe

Wahoo Ingredients

  • Two Wahoo filets (preferably, freshly caught)
  • Olive Oil
  • Fresh Basil
  • Salt & Pepper to Taste


Tomato Bruschetta Ingredients

  • Cherry Tomatos
  • 1.5 tbsp Garlic Olive Oil
  • Two Cloves of Garlic, Minced
  • Fresh Basil
  • Salt & Pepper to Taste


Wahoo Preparation

  • Pat down your Wahoo filets
  • Mix olive oil, fresh basil, salt & pepper in a bowl
  • Throughly coat both sides of the Wahoo filets
  • Add 1 tbsp of olive oil to a pan on medium-high heat
  • Add filets once oil is hot, cooking each side for approx 4 minutes
  • Add additional olive oil as needed


Tomato Bruschetta Preparation

  • Cut cherry tomatoes in half and add to bowl
  • Drizzle garlic olive oil over tomatoes 
  • Add minced garlic cloves, salt & pepper


Allow 20 minutes to marinate.  Sprinkle fresh basil, then stir mixture.  


Top the wahoo with the tomato bruschetta, then drizzle with balsamic glaze.  Pair it with a vegetable of your choice and of course, a nice glass of wine.  We went with asparagus and a Chateau St. Michelle Sauvignon Blanc, and this meal was absolutely delicious.
