Crispy Pan Fried Rockfish

Recipe

Ingredients

  • Two Rockfish filets (preferably, freshly caught)
  • 3/4 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 tbps parsley
  • 1 egg
  • 3 tbsp mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Garlic olive oil (for frying)


Preparation

In a bowl, combine the egg, mayonnaise, Dijon, garlic, salt, & pepper.  Pat dry Rockfish and coat thoroughly. In another bowl, combine the Panko, Parmesan, & parsley, then coat the Rockfish with the breadcrumb mixture.  


Add garlic olive oil to the pan and heat to medium-high heat.  Add the Rockfish filets and cook for 90-120 seconds on each side (a few more if you've caught a thick Rockfish).  


If you'd like, add some tarter or cocktail sauce for dipping. Pair it with a vegetable of your choice and of course, a nice glass of wine.  We went with asparagus and a Chateau St. Michelle Sauvignon Blanc, and this meal was absolutely delicious.
